Creamy Jalapeno Corn Casserole, cream cheese, and whole kernel corn with a little kick from jalapenos make this an inviting casserole for any meal.
THREE INGREDIENTS CREAMY CORN CASSEROLE
The Creamy Corn Casserole recipe is a budget-friendly side dish that only calls for three ingredients and will feed a crowd, perfect for potlucks and family gatherings.
Our Thanksgiving menu is down, and this Creamy Jalapeno Corn Casserole is one of our favorite side dishes.
It is easy and quick, with a great combination of flavor and crunch from the jalapenos and corn.
The jalapeños in the dish give an incredible kick in flavor but not too much heat. This makes it nice for everyone to enjoy, including the children.
You start by softening the cream cheese in the microwave, adding the other ingredients, and finishing it in the oven. Or you can mix the softened cream cheese with all the other ingredients and bake in the oven. Either way, both ways are equally delicious.
This quick, easy, and delicious side dish is perfect for the holidays or your favorite get-together. I hope you make it this Thanksgiving or soon. Enjoy!

TIPS AND TIDBITS TO MAKE THE BEST CREAMY JALAPENO CORN CASSEROLE
Corn. Feel free to use frozen corn in the recipe. For extra flavor, I like to use fresh corn when it is in season. Cut 6-8 large ears of corn off the cob and adjust the cooking time to 15-20 minutes longer. You can cook the corn on the cob, cut it off, and make the recipe later.
Make it richer. Any added milk will work in this recipe, but adding heavy cream will make the cream cheese sauce even creamier.
Make spicier. Add more minced jalapenos or leave a few of the seeds. You can even sprinkle lightly with red pepper flakes.
Make milder. Omit the jalapeno peppers and substitute them with a small can of minced green chiles, or substitute them with minced bell peppers for no heat at all.
Make in a slow cooker. Put all the ingredients in a slow cooker and cook on low for 3 or 4 hours. Stirring every hour.
