Have you every had Pig Candy? If you have not, you are missing the highlight of eating bacon. When I first heard about this recipe over at Mommy's Kitchen, I thought why

Then I made my first batch, and that is all it took for me to say WOW! That is the reaction I get every time I take it somewhere, as it was at a recent get together with my high school classmates along with these Shrimp Stuffed Eggs

It is the combination of the salty and sweet together with the heat of the red pepper flakes that makes it explode in your mouth. There are endless possibilities for this recipe. Tonight we are eating a Pig Candy, Lettuce and Tomato Sandwich, that I will post later.

Spicy Brown Sugar Bacon
adapted from Mommy's Kitchen
    3/4 cup light brown sugar
1 teaspoon fresh ground black pepper
    1 tablespoon red pepper flakes
    1 pound thick-cut bacon, 24 slices
Preheat the oven to 375 degrees F. Mix brown sugar, black pepper, and red pepper flakes together in a medium bowl; set aside. Line the bottom and up the sides of a baking sheet with foil; place a wire rack on top of the foil. Lay bacon on the rack side by side. Sprinkle spice mixture evenly to the edge of the bacon and pat slightly. Put the baking sheet on the top rack of the oven and bake until crisp, about 25-35 minutes. Remove from the oven to a serving dish and let cool slightly before serving.

*Note: If using thick cut peppered bacon, omit the pepper in this recipe. You can cut back some on the red pepper flakes if it is to much heat.
