Pineapple Chess Pie

Pineapple chess pie has all the ingredients of a traditional chess pie except for adding a small can of crushed pineapple.

When I think of some of the pies that my Mother would make during the holidays, I think of this beautiful Pineapple Chess pie, which is rich and delicious.


Isn't it funny how we remember certain things about our Mother's traditions? About one week before the holidays, Mother would set up a dessert table.

Do you remember when there were card tables?

Beside her buffet, she would lay a pretty tablecloth on a card table, and as she made the desserts, she would place them on the table, ready for guests to enjoy.

As a little girl growing up, I always thought, "That is just what I am going to do when I get married "Have a Dessert Table."

Well, I kept my plans, which I did about one week before the big day.

Now that I am a grandmother, I love to see my grandchildren's eyes light up when they get to my house and see my "Dessert Table" like Granny's.

TIPS AND TIDBITS TO MAKE THE BEST PINEAPPLE CHESS PIE


Crust.  Make sure the pie crust is a deep dish crust.  I use a homemade crust, but you can also use a frozen store bought pie crust.

Pie Filling.  Make sure the egg whites are well blended with the yolks before adding the other ingredients.

Spilling over.  If you are concerned about the pie spilling over, place the pie plate on a sheet pan before filling it and then placing it in the oven.

Check if pie is done.  To check to see if the pie is done place a knife about an inch away from the crust.  If it comes out clean and the pie is slightly jiggly in the center, it is done.

Cover the pie.  After 30 minutes, cover the entire pie with foil to prevent it from over browning.  

Let the pie cool.  Before placing the pie in the refrigerator, let the pie cool completely. It could change the texture of the pie.  The pie is delicious and can be eaten at room temperature or chilled.

Chill the pie.  Let the pie set in the refrigerator for at least 2 hours before serving chilled.

Make ahead. The pie is excellent for making ahead. It can be made a day before serving. The flavors deepen as it sits, making it taste even better the next day.



WHAT YOU NEED TO MAKE PINEAPPLE CHESS PIE


Deep dish unbaked pie crust
Butter, melted
Sugar 
Flour
Eggs
Small can (8.25 oz.) crushed pineapple
Milk 
1 teaspoon vanilla


HOW TO MAKE PINEAPPLE CHESS PIE


Preheat oven to 350 degrees. In a small bowl, drain pineapple; reserve juice. 

Add pineapple juice to a 1-cup measuring cup and fill with milk to make one cup; set aside.

In a small bowl, combine flour and sugar; set aside. In a medium bowl, beat eggs until whites are well blended with the yolks. Add the sugar mixture and beat well.

Add the milk mixture, melted butter, and vanilla, and mix until creamy and smooth. Stir in the pineapple until well blended, and then pour into an unbaked pie shell.

Bake for 1 hour or until the pie is set.
