Easter is just around the corner, and I had this recipe for Key Lime Magic Cookie Bars well before Christmas and never got to make them.
If you are familiar with the Magic Cookie Bars, you will recognize that this is just a new spin on them.
You will love these for the folks out there who are allergic to chocolate or not a fan {yikes} of chocolate.
This recipe is very similar to the Magic Cookie Bars in that you assemble the layers with the ingredients. Still, with this one, you use white chocolate instead of semi-sweet, and key lime juice is added to the condensed milk to give it that wonderful tart flavor.

TIPS AND TIDBITS TO MAKE THE BEST KEY LIME MAGIC BARS
Key lime. Bottled or fresh key lime can be used in this recipe. The zest of the lime is a pleasing addition, so be sure to zest it before squeezing it for juice.
Crust. While a graham crust is classic in magic cookie bars, feel free to use vanilla wafer cookie crumbs.
Toast the almonds. This gives the magic cookie bars an enhanced flavor. Pecans are also a great addition. Use 1/2 cup of each.
For neat slices. Line the baking dish with parchment paper and lift it out before slicing it into bars. To cut quickly, place the cooled bars into the refrigerator until the chocolate is set.
Cut small. These bars are rich and sweet, so cut them into small bars.
WHAT YOU NEED TO PREPARE KEY LIME MAGIC BARS
Plain graham cracker crumbs
Sweetened, flaked coconut
White chocolate morsels
Almonds
Sweetened condensed (not evaporated) milk
Fresh or bottled key lime juice
HOW TO PREPARE KEY LIME MAGIC COOKIE BARS
Preheat oven to 350 degrees F or 325 degrees F using a glass baking dish.
Melt butter in a small bowl in the microwave on high for 30 seconds.
Combine graham cracker crumbs with the melted butter and place the mixture into a 9″ x 12″ baking dish, patting the crumb mixture down evenly with your hands.
Layer the white chocolate chips, coconut, and nuts on the graham cracker mix.
Mix the condensed milk, lime juice, and water in a small bowl, and immediately pour the mixture evenly over the other layers in your baking dish.

Bake for 25-30 minutes or until the top is lightly golden.
