NO BAKE HAZELNUT COFFEE PIE

Whether you are a coffee lover or not, you will love the velvety smoothness of this scrumptious pie.  It is truly a family favorite around the holidays.

Coffee Pie, another fabulous no-bake dessert, is a white chocolate pudding gently flavored with hazelnut instant coffee in a chocolate cookie crust.

Every time my daughter, Jennifer, brings this Coffee Pie to a gathering, people request the recipe.

She has brought this pie to several of our family gatherings, but since I always depend on her to bring it, I never get the recipe.

Well, she brought it this year for our Easter meal and gave me the recipe, which I will share with all of you.

This coffee pie has all the indulgence of a rich dessert you will rave about.

Here's a quote from one of the pinners: " This is a quick and easy-peasy little pie with a unique flavor that I absolutely love!

This pie is beyond delicious.  I hope you will make it soon.

TIPS AND TIDBITS TO MAKE THE BEST COFFEE PIE

Chocolate pie crust.  This recipe calls for a chocolate pie crust.  I have used a store bought chocolate graham crust and an Oreo pie crust.  Both homemade and store-bought are equally delicious.

Intense coffee flavor.  The recipe calls for hazelnut instant coffee, but if you are not a fan of hazelnut flavor or want a bold coffee flavor, try instant espresso powder.

Cool whip versus whipped cream.  I really don't recommend using whipped cream in this recipe.  The texture will change, and the longer it sits in the refrigerator, the more it will break down.

Overmix.  Don't overmix after adding the cool whip to avoid the mixture breaking down and not chilling right.  Mix just until creamy and smooth.

Freezing.  This recipe is a no-bake icebox pie recipe.  However, it can be frozen and served frozen.  Let it set out for about 30 minutes before slicing to serve.

HOW TO MAKE COFFEE PIE

In a medium mixing bowl, whisk together milk and instant coffee; add pudding mix and 1/2 of the whipped topping.

Beat until creamy and mixture becomes thick, about 1 minute.

With a spatula, spread the mixture into a prepared crust and top with the remaining whipped topping.

Refrigerate until ready to serve.

Unfortunately we don't get white chocolate flavoured pudding or cool whip here in the UK.
I wonder if I could use something as a substitute...must investigate!

    ReplyDelete
  63. Justbecauseitmakesmesmile ~ I would substitute vanilla pudding for white chocolate pudding and you can substitute whip cream for the cool whip. Hope this helps! Give it a try and let me know how it turns out and I will put your note under my recipe for others to see....

    1. I am sorry I am just now able to reply... The recipe will not thicken with the cook and serve jello. I feet your frustration...I have made this mistake before. Give it another try and you will see how fabulous this pie is. :)

  66. That sounds awesome! Why haven't I thought of doing this?

  67. How does 1-1/4 cups of milk work with two pkg of pudding? Isn't it like thick paste? That much pudding should normally have 4 cups, I can see using 2-1/2 or 3 cups....but that small amount can't possibly make anything edible

    ReplyDelete
    Replies
    1. I'm sorry the ingredients bother you. That is frustrating. It is not about how much milk. It is about the cool whip. It makes all the magic come together in this wonderful delicious pie.
