Strawberry Bacon Spinach Salad

In the perfect world, I think Strawberry Bacon Spinach Salad would be right up there at the top with the combination of the sweetness of the strawberries and the crispy, salty taste of  the bacon.  Ever since the strawberries have been plentiful in the grocery stores, I have been planning on making this salad, and each time I get ready to make it, we have eaten all the strawberries.  You see, my husband is a big fan of strawberries, and one of his favorite ways to eat them, is to slice them up, put sugar on them, and then let them sit in refrigerator until they make that wonderful juice in the bottom of the bowl.  Now-- that is not all, then he tops them off  with a big dollop of whip cream.  This is his perfect World!

The first time I ate a Spinach Salad was in my high school Home Economics Class.  It was actually a Wilted Spinach Salad with the salad dressing being the bacon grease and a little cider vinegar drizzled on top.  Wow!  That was a long time ago. Besides cooking the bacon, there is little preparation in making this salad.  Since I do not like to mix up this salad, I just start by put a big handful of spinach on a plate and layer the rest of the ingredients.  I topped off my salad this time with a few sliced boiled eggs. Really yummy!

When it comes to the dressing, I want a really tangy sweet dressing.  When I was catering, I made a dressing that had a base of  three to one balance.  Three being the oil and one being the acidity in the dressing. I always use honey to sweeten it, and then you can go from there with your spices to dress it up.   


Strawberry Bacon Spinach Salad

Ingredients:
10 oz. Organic Baby Spinach
1/2 medium red onion, thinly sliced
6 strips of bacon, cooked crisp and chopped
3 boiled eggs, sliced (optional)
1 1/2 pint Strawberries, hulled and sliced
1 bottle of your favorite vinaigrette salad dressing

Directions:
Arrange a handful of spinach on a plate.

Layer the red onion and bacon on top of the spinach.

Arrange three slices of egg in the salad and add a layer of sliced strawberries. 

Drizzle with dressing. Repeat again.

  16. What a wonderful salad. I love all the vibrant colors from different ingredients. hehe...your hubby really knows how to eat well. That is another perfect way to enjoy the strawberries, beside putting them in this salad.
