Printable Recipe
- 1 (9 inch) pie crust
1 and 1/2 cup sugar
3 tablespoons unsweetened cocoa powder
4 tablespoons unsalted butter, melted
2 large eggs, beaten
3 egg yolks
3/4 cup milk (evaporated, whole, or half and half)
1 teaspoon vanilla
1/4 teaspoon salt
2 cups sweetened whipped cream
In the bowl of an electric mixer using the paddle attachment, blend sugar with cocoa powder, butter, eggs, egg yolks, milk, vanilla, and salt until creamy smooth.
Pour the filling into the pie shell and bake for 45 minutes or until the filling is set around the edges but a little jiggly in the center.
Remove from oven and place on a cooling rack until completely cooled. Before serving, top with sweetened whip cream.
Note: If the crust begins to brown too much, place a ring of foil strips around the edge of the pie crust.
