HOW TO GET THE MOST OUT OF LEFTOVER TURKEY
When making your Thanksgiving turkey keep in mind the delicious soup you can make from the turkey bones and the lingering meat left on the bones. It is the best kept secret for leftover makeover recipes.
Instead of throwing out the turkey carcass, I put it in a stockpot and filled it with water.
Simmer it for an hour or two, and then easily remove the meat.
Discard the bones and add your vegetables, and 15 minutes before serving, add the pasta shell.

WHAT YOU WILL NEED TO MAKE TURKEY CARCASS SOUP
- Turkey carcass
- Water
- Salt
- Coarse black pepper
- Celery
- Onions
- Diced canned tomatoes
- Whole kernel corn
- English peas
- 4 Carrots
- Bay leaves
- Coriander
- Onion powder
- Garlic powder
- Pasta shells
HOW TO MAKE TURKEY CARCASS SOUP
- Place the turkey carcass into a large stock pot. Add water to just over the carcass. Bring to a boil. Reduce heat and simmer for 1 hour or until meat starts to release from the bones.
- Remove the turkey carcass and any other bones left in the bottom of the pot. Chop any of the bigger pieces of remaining turkey meat.
- Strain the broth through a fine mesh strainer into a large container. Pour the broth back into the stock pot.
- Add the chopped turkey to the strained broth; bring to a boil. Add celery, onions, tomatoes, corn, peas, carrots and bay leaves.
- To season, add coriander, onion powder, and garlic powder. Taste and add additional salt and pepper if needed.
- Cook for an hour, add pasta, and cook for 15-20 minutes. Remove bay leaf before serving.
