Cabbage Roll Skillet Casserole {with a low carb option using cauliflower rice}

Cabbage Roll Skillet Casserole, made on top of the stove with all the ingredients of the traditional cabbage rolls with a low carb option using cauliflower rice.


Traditional cabbage rolls take time to make.  You boil the cabbage leaves and then roll the leaves up with meat and rice mixture.  They are truly delicious and worth every minute making them, but sometimes I just want them to make themselves...grins.


Well, you know that is not going to happen, so I decided to make them into a skillet casserole.  Skillet casseroles are simply casseroles cooked on top of the stove.

  

To start the recipe, I browned some hamburger meat and then added the ingredients I usually put in my stuffed cabbage rolls, onion, tomato sauce, rice or cauliflower rice.  Secondly, I chop the cabbage into 1/2 inch pieces and add it to the meat mixture.  To finish cooking it, I put the lid on it and then let it simmer until the cabbage is tender.  

This is such a simple way to have all the flavors of cabbage rolls without any fuss.  I hope you get to make some soon.  Enjoy!



Cabbage Roll Skillet Casserole
  • 1 1/2 lb. hamburger (85/15)
  • 1 whole onion, chopped
  • 1/2 teaspoon salt
  • 1 teaspoon coarse black pepper
  • 2 teaspoons Grill Mate Montreal Steak Seasoning
  • 8 oz. tomato sauce
  • 1 1/2 cup cauliflower rice *(or 1 cup white long grain rice cooked)
  • 1 medium cabbage, chopped
  • 1 15 oz. can diced tomatoes
  • 1/2 cup ketchup
  • 1/4-1/2 teaspoon red peppers (optional, but so good)

In a large skillet, on medium heat, brown hamburger.  Add onion, salt and pepper, steak seasoning.  Stir to combine all the ingredients.

Add tomato sauce and cauliflower rice (long grain rice), cabbage, diced tomatoes and ketchup.  

Simmer on low heat until cabbage is tender.  Stirring occasionally.

*Cook's Note:  You can purchase the cauliflower rice or as the Green Giant product calls it "cauliflower crumble." at your local Walmart.
