Remember the watermelon puzzle that took Pinterest by storm several years ago?
Well, I created a simpler version. Layering the salad is so much easier and quicker, and the taste is the same.
Still amazing!
The sweeter the watermelon, the better the flavor. I love the combination of the kiwi, but if you are not a fan just substitute cantaloupe, or even yellow watermelon if it is available.
I am a huge fan of Feta, and it may not be for you, so you can just leave it out or use another kind of cheese.
Make it your salad and use the combination you like. Mint and basil are a great addition too if you drizzle with a balsamic glaze.
Watermelon is still plentiful in the grocery stores and farmers markets here in Texas. This past weekend even the price had gone down from what they were earlier in the summer.
We usually cut the watermelon in half and cut up the inside into big junks and put them in a large bowl and place in the fridge.
This makes it easier and quicker to assemble for salads, smoothies, and good ole grab and go snack when you want a refreshing snack.

Watermelon Kiwi Feta Layered Salad, crisp watermelon layered with kiwi fruit, a few blueberries, and sprinkled with a heavy dose of Feta cheese. Then wait...drizzled with a baslamic blueberry syrup! Oh! my. A summer obsession that will rock your world.

INGREDIENTS:
- 3-4 lbs. seedless watermelon, rind removed, cut into 1-inch cubes
- 4-6 whole kiwi fruit, peeled and sliced thick
- 1/2-1 cup feta cheese, crumbled in large chunks
- 1/2-1 cup fresh blueberries
- 1/4 cup Walden Farms Sugar Free and Calorie Free Blueberry Syrup
- 1-2 tablespoons balsamic glaze
INSTRUCTIONS
- In a 1 cup measuring cup, add blueberry syrup and balsamic glaze. Stir until all is mixed well; set aside.
- In a large glass bowl, begin layering salad. Start with a layered of watermelon evenly arranged in the bottom of the bow.
- Second layered arranged kiwi slices evenly across the top of the watermelon. Lightly sprinkle feta cheese over the top.
- Continue layering watermelon, kiwi, and Feta until almost to the top of the bowl.
- Top the final layer with a cup of fresh blueberries. Drizzle with blueberry balsamic mixture. Serve immediately.
- Cook's Note: It is best to make only enough for how many you are serving with no leftovers. For personal preference, you can adjust the ratio of the balsamic glaze and the blueberry syrup.
