Sweet potatoes are plentiful right now. We love them baked whole, pies, and in a casserole, but our new favorite is roasted. The flavor combinations are endless. You can make them savory or sweet.
Did you know how healthy sweet potatoes are? They are rich in antioxidants, potassium, and iron. They are one of the most nutritious vegetables you can eat.
One more good reason we love to eat them.
I like to roast several at a time to have leftovers. We love them in salads as much as a side dish. I even use leftovers to make sweet potato pies.
You will be amazed at how intense the sweet potato flavor is in the pies.

Perfect Roasted Sweet Potatoes with Smoked Paprika
Roasted crispy tender bite size pieces of sweet potatoes coated with avocado oil, and generously sprinkled with paprika, coriander, salt and pepper, a little sugar, and a pinch of cayenne pepper.

ingredients:
- 4 large sweet potatoes, washed and peeled, cut into 1-inch cubes
- 2-3 tablespoons avocado oil (or olive oil)
- 1 1/2 teaspoon salt
- 1 teaspoon coarse black pepper
- 3/4 teaspoon coriander
- 3/4 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 1/4 cup sugar (or Truvia)
instructions
- Preheat oven to 425 degrees.
- In a small bowl mix salt, black pepper, paprika, coriander, red cayenne, and sugar; set aside.
- In a bowl, toss sweet potato cubes with avocado oil. Arrange sweet potatoes loosely on a rimmed baking sheet being sure not to overlap.
- Sprinkle season mix over potatoes.
- Place in the oven and bake for 20 minutes. Remove from the oven and toss/stir sweet potatoes and place back in the oven for 15-20 minutes more or until golden brown.
