This cake is rich, moist, and full of chunks of fresh apples, walnuts, cream cheese, and a lot of butter with a hint of cinnamon.  All the flavors of a fall dessert, the perfect dessert to wow your guests during the holiday season.

TIPS AND TIDBITS TO MAKE THE BEST APPLE CREAM CHEESE BUNDT CAKE


Variety of apples.  Any variety of apples will do.  I prefer to use the McIntosh variety for its tart and firm texture when baked.

Prep the bundt pan.  The best way to grease a bundt pan with shortening and dusting it with flour.  Be sure, and tap out any excess flour left in the pan.  You can use a flour and oil spray like Baker's Joy.  Make sure every nook and cranny is covered.

Mixing the batter.  You will want a dense cake that will hold together well with the apples so only mix until all the ingredients in the batter are incorporated then stop mixing.  Incorporating excess air in the batter will make a more fragile cake. 

Room temperature.  Make sure the eggs and cream cheese are at room temperature.  This will ensure the batter will produce a cream texture.

Fill the bundt pan.  Fill the bundt pan on 3/4 full.  Any more batter will cause the batter to overflow as it is baking.

Let the cake cool.  Let the cake cool for 15 minutes before inverting onto a serving platter.  Any shorter time will cause the cake to break apart when it comes out.  Any longer time will cause the cake to stick to the bundt pan.  Let the cake cool for 5-10 minutes before slicing.

WHAT YOU WILL NEED FOR THIS RECIPE

10" Bundt pan

Stand mixer or hand mixer

Spatula

2 cup measuring cup

Sugar

Butter

Cream cheese

Eggs

Flour

Salt

Vanilla extract

Baking Apples

Cinnamon


HOW TO MAKE APPLE CREAM CHEESE BUNDT CAKE


Preheat oven to 325 degrees F.  Grease and flour a 10" bundt pan; set aside.  Crack eggs into a 2 cup measuring cup; set aside.

Toss chopped apples in cinnamon; set aside.

In the bowl of a stand mixer using the paddle attachment cream butter and cream cheese on medium speed; scrape down the sides of the bowl.

Add sugar one cup at a time and beat until light and fluffy; approximately 3 minutes; scrape down the sides of the bowl.  Add eggs one at a time beating after each one.  Add vanilla and mix thoroughly.

Mix flour and salt.  Add to the sugar and egg mixture one cup at a time being careful not to overmix.  If there are flecks of flour showing that is ok.

If necessary, drain apples of any juices.

Remove the bowl from the stand mixer using a rubber spatula, and fold in the cinnamon apple mixture.

Fold walnuts into the batter, scraping around the sides, and stir cake batter one last time.

Pour cake batter into the prepared pan.  Bake for 1 hour and 30 minutes.  I check for doneness at 1 hour and 25 minutes and bake for 5 minutes if necessary.
