Baby Lima Beans, they sometimes called butter beans in the south. They are little green beans with the texture of creamy butter, cooked without adding cream — southern comfort food.
A Southern Spring delight, Baby Lima Beans, served alongside a hot pan of cornbread, fried okra, fresh tomatoes, cole slaw, and garden spring onions. Add fried chicken, and you have the perfect meal.
Green baby lima beans keep their shape when cooking while their cousin, the white lima beans cooks all to pieces and have a mealy quality about them.
I like to buy several bags of fresh shelled baby lima beans from a local produce stand in the summer and freeze in my freezer to enjoy all through the winter months.
WHAT YOU WILL NEED TO COOK THE SIMPLEST SOUTHERN BABY LIMA BEANS
- Large stock pot
- Large spoon
- Bacon grease
- Butter
- Salt and pepper
- Coriander
- Onion powder
- Baby lima beans
HOW TO COOK THE SIMPLEST SOUTHERN BABY LIMA BEANS
- Bring 2 quarts of water to a boil. Place the fresh or frozen baby lima beans and the rest of the ingredients except the butter in the stock pot when the water comes to a boil.
- Simmer for 45-55 minutes. Stir every so often and add water if needed. Keep the water to a minimum. Not too much.
- Remove the baby lima beans from the burner and add the butter.
- Toss the butter around in the baby lima beans.
- Check to see if the butter beans need more salt and pepper.
- The secret to the most flavorful baby lima beans is to add the butter at the end.

I learned to cook my baby lima beans from my Mother. She cooked her baby lima beans in salt pork or bacon. Her baby lima beans were amazing. I am carrying on the delicious tradition.
There were times when Mother was out of bacon and salt pork, but she always had a jar of bacon grease sitting on top of the stove.
I also keep a jar of bacon grease, but mine hangs out in the refrigerator ready to use at the drop of a hat, haha!
