Old Fashioned Meatloaf is one of my family's favorite meals.  Who doesn't love a good meatloaf sandwich?  I make my classic meatloaf recipe most days, but for this recipes, I did a twist on our favorite.  

I usually add chopped green bell peppers and onions to my recipe, but I didn't have any bell peppers, and it was late in the day, and I didn't want to run to the store.

But I did have a few green tomatoes on the counter and didn't have time to fry them so I chopped them up and thought how would they taste adding them to the meatloaf for a substitute.  Thinking, I may just be on to something tasty.

WHAT YOU WILL NEED TO MAKE DICED GREEN TOMATO MEATLOAF

  • Large mixing bowl
  • 90/10 ground beef
  • Salt
  • Pepper
  • Garlic powder
  • Coriander
  • Bread Crumbs
  • Onions
  • 2 medium green tomatoes
  • Evaporated milk
  • Ketchup
  • Mustard
  • Brown sugar
  • Worchester sauce
  • Deep dish baking dish
  • Small bowl



HOW TO MAKE GREEN TOMATOES MEATLOAF

  • Preheat oven to 350 degrees F.  Spray a deep dish baking dish with a nonstick cooking spray; set aside.

  • In a large bowl, combine all the ingredients, except for the ketchup, mustard, brown sugar, Worcestershire sauce, and mix until well blended.

  • Be careful not to handle the meat mixture too much.  Shape into a round bun and place in the baking dish.  Pour water a third of the way up in the dish.

  • Bake in the oven for 1 hour.   In a small bowl, mix together ketchup, mustard, brown sugar, and Worcestershire sauce.  Spoon ketchup mixture over the meatloaf and return to the oven for another 15 minutes.  

I had a few green tomatoes that were needing to be cooked and didn't have time to fry them so I chopped them to add them to the meatloaf.

We enjoyed this flavorful twist on an old classic.  My grandsons made them a plate as soon as they came in the door and as you can see the sides were delicious too.  They love meatloaf and this recipe did not disappoint.

ingredients:

  • 2 lbs. hamburger (90/10)
  • 1 cup bread crumbs 
  • 1/2 cup chopped onion
  • 2 medium green tomatoes, diced
  • 2 eggs
  • 3/4-1 cup evaporated milk (whole milk or half and half)
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon ground coriander (my addition)
  • 1-2 cups of water
  • 1 cup ketchup
  • 1 tablespoon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
