Old Fashioned Meatloaf is one of my family's favorite meals.  

Who doesn't love a good meatloaf sandwich?  I make my classic meatloaf recipe most days, but for this recipe, I added a twist to our favorite recipe.  

I usually add chopped green bell peppers and onions to my recipe, but I didn't have any bell peppers, and it was late in the day, and I didn't want to run to the store.

However, I did have a few green tomatoes on the counter and didn't have time to fry them, so I chopped them and considered how they would taste if I added them to the meatloaf as a substitute for bell pepper. 

I may be on to something tasty.

We enjoyed this flavorful twist on an old classic. As soon as my grandsons came in the door, they were served a plate, and as you can see, the sides were delicious, too. 

They love meatloaf, and this recipe did not disappoint.

TIPS AND TIDBITS TO PREPARE THE BEST HEARTY MEATLOAF


Hamburger.  For a flavorful meatloaf, use a high-fat hamburger.  I go to the middle ground and use an 85/15 ratio.

Moist meatloaf.  To get a moist meatloaf, use vegetables that release juices, such as onions, bell peppers, and, in this recipe, green tomatoes.  Add milk to the bread crumbs and allow all to absorb with the eggs while mixing with the hamburger.

Seasoning correctly.  Use straightforward seasoning like salt, pepper, garlic powder, and ground coriander not to mask the flavorful flavors of the meatloaf.

Mix with care.  Once all the ingredients are in the bowl, use a light touch to mix them all together.  Overmixing will yield a crumbly meatloaf that breaks down as it cooks.

Rest the meatloaf. It is essential to rest the meatloaf before slicing and serving. The wait time allows the juices to stay sealed inside, giving the meatloaf that perfect bite.

Large mixing bowl
Ground beef
Salt
Pepper
Garlic powder
Coriander
Bread Crumbs
Onions
Green tomatoes
Evaporated milk
Ketchup
Mustard
Brown sugar
Worchester sauce
Deep dish baking dish
Small bowl

HOW TO PREPARE HEARTY MEATLOAF


Preheat oven to 350 degrees F.  

Spray a deep dish baking dish with a nonstick cooking spray; set aside.

In a large bowl, combine all the ingredients except for the ketchup, mustard, brown sugar, and Worcestershire sauce, and mix until well blended.

Be careful not to handle the meat mixture too much.  Shape into a round bun and place in the baking dish.  Pour water a third of the way up in the dish.

Bake in the oven for 1 hour.   In a small bowl, mix together ketchup, mustard, brown sugar, and Worcestershire sauce.  Spoon the ketchup mixture over the meatloaf and return to the oven for another 15 minutes.
