Pineapple Casserole

Pineapple Casserole, a sweet Southern casserole that can be served as a side dish or dessert at Easter on many Southern tables without a doubt.   It is made with canned pineapple, flour and sugar, sharp cheddar cheese, and topped with crushed Ritz crackers.  


Who would have thought pineapple, cheddar cheese, and Ritz crackers combined would make a remarkable, delicious dish only in the South?

Pineapple Casserole is so easy and quick to make.  It pares well with any pork dish, especially Baked Ham.  

I like to use sharp cheddar cheese and brown sugar to elevate the pineapple's flavor. And oh, is it elevated!  

The crushed Ritz crackers tossed in melted butter blanketed on top with a very light sprinkle of cayenne pepper, are simply scrumptious.

WHAT YOU WILL NEED TO MAKE PINEAPPLE CASSEROLE


  • Large bowl
  • Small bowl
  • Large spoon
  • Rubber spatula
  • Baking Dish
  • Pineapple chunks
  • Sugar
  • Brown Sugar
  • Flour
  • Shredded sharp cheddar cheese
  • Ritz crackers
  • Butter
  • Cayenne pepper (my addition)


HOW TO MAKE PINEAPPLE CASSEROLE



  • Preheat oven 350 degrees F.  Grease a medium size baking dish with butter.  Drain the pineapple in a bowl and reserve the juice.

  • In a large bowl, stir together the sugar, brown sugar, and flour.   Add the reserved pineapple juice.  Stir until well combined and no lumps.  Stir in 1 cup of the shredded sharp cheddar cheese.

  • Add the drained pineapple chunks and fold all together gently, being sure not to mash the pineapple too much.  

  • Pour the mixture into the prepared casserole dish.  Sprinkle evenly with the remaining shredded sharp cheddar cheese evenly to the sides of the dish.

  • In a small bowl, toss together the melted butter and cracker crumbs. Sprinkle cracker mixture over the shredded sharp cheese evenly to the sides of the dish.

  • Sprinkle very very little amount of cayenne pepper over the crackers for a slight taste of heat.  This is optional and can be omitted.

  • Place in the oven and bake for 30 to 40 minutes or until cheese is bubbly and crackers are golden brown.

  • Remove from the oven and let cool for 15 minutes before serving.

Ingredients:

  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 6 tablespoon flour
  • 2 cups sharp cheddar cheese
  • 2 (20 oz.) canned pineapple chunks
  • 2 sleeves Ritz crackers, crushed
  • 1/2 cup butter, melted (including to extra for greasing pan)
  • 1/2 teaspoon cayenne pepper (optional)

How to cook Pineapple Casserole

  8. Remove from the oven and let cool for 15 minutes before serving.

Notes:

The Pineapple Casserole is best eaten when made. The crackers become limp when refrigerated. Doubling the recipe for leftovers is not recommended.
