Eggs. I use large eggs, but any size will work. I like my eggs slightly runny. To help you get yours just right, it will determine how long you cook the egg cups. The Canadian bacon is already cooked, so keep that in mind also.
Canadian Bacon. This is the base of the cup. It is lean and sturdy enough to hold the eggs. For another option you can substitute prosciutto, sliced deli ham, or even bacon.
Cheese. I use gruyere cheese, but cheddar, mozarerrela, fontina, and parmesan would be great.

HOW TO MAKE CANADIAN BACON & GRUYERE EGG CUPS
Heat oven to 400 degrees F. Spray a 12-cup muffin tin generously with a nonstick cooking spray.
Press and arrange a slice of Canadian Bacon at the bottom of each well. Bake for 10 minutes. Remove from the oven.
Sprinkle a tablespoon of shredded gruyere cheese over the baked Canadian bacon.
Carefully crack an egg over each of the Canadian bacon cups. Season with a bit of coarse black pepper.
Reduce the oven temperature to 325 degrees F. Put the Canadian bacon cups back into the oven and bake for 15 minutes, more or less, depending on your preference for how you like your eggs.
Sprinkle with coarse salt or herb finishing salt.
Garnish with chopped fresh herbs. (optional)
