EASY CHERRY TOMATO CAPRESE SALAD
Caprese salad is one of the easiest salads to make throughout the year, but the simplicity of the recipe doesn't mean it lacks zesty flavors. The classic combination of all the ingredients topped with a tangy glaze is irresistible.
Caprese salad is perfect year-round, but my favorite time to enjoy this irresistible salad is when spring rolls around, and summer is just behind.
It is ideal for summer because it is light, refreshing, and so easy to prepare.
I love bringing it to potlucks, picnics, or family barbecues because it is so easy to travel with. It can be served at room temperature or right out of the refrigerator.

TIPS AND TIDBITS TO MAKE THE BEST CHOPPED CHERRY TOMATO CAPRESE SALAD
Basil. Fresh basil leaves are preferred for this salad as they give a vibrant flavor. Just tear the leaves gently or chiffonade them by rolling up 3-4 leaves at a time and slicing them. Dried basil may be used but may alter the fresh essence of the salad.
Tomatoes. I use cherry tomatoes and cut them in half, but you can also use grape tomatoes or Roma. Be sure and cut the tomatoes the same size as the mozzarella pearls. Use a sharp knife to glide through the tomatoes and the basil, avoiding squishing too much juice from the tomatoes and bruising the basil.
Mozzarella. I used BelGioioso Fresh Mozzarella Pearls Cheese because they are super easy to use in the salad, but you can use BelGioioso Sliced Fresh Mozzarella Cheese. Just slice them the same size as the tomatoes.
Flaky sea salt and coarse ground black pepper. Sprinkle over the salad just before serving to enhance all the flavors. Don't leave this out.
Balsamic glaze. I use Monari Federzoni Glaze with Balsamic Vinegar. It is a ready to use sweet and tangy glaze with balsamic vinegar in a handy squeeze bottle. It is important to drizzle the balsamic glaze just before serving.
Not a fan of balsamic glaze. If you are not a fan of the sweetened balsamic glaze, you can drizzle with a good grade of olive oil and season with sea salt and coarse black pepper.
Serving. The salad tastes best served immediately with the drizzled glaze. However, it may be refrigerated for up to 1 day in an airtight container without the glaze.

Cherry tomatoes
Mozzarella pearls

Balsamic glaze
Sea salt
Course black pepper
HOW TO MAKE CHOPPED CHERRY TOMATO CAPRESE SALAD
In a medium size bowl, add cherry tomatoes, mozzarella pearls, and basil.
Toss the ingredients gently.
Drizzle balsamic glaze over the salad.
Serve immediately.
Over each serving, sprinkle sea salt and coarse black pepper.
