Smoked salmon cakes are an easy and delicious weeknight meal option, and believe it or not, they are affordable.
SMOKED SALMON PATTIES
Smoked salmon patties are perfectly crisp on the outside and deliciously tender and flaky on the inside. They are made with packaged smoked sliced salmon instead of canned salmon.
One bite of these smoked salmon cakes and any thought of you using canned salmon will fly out the window. That's how I felt the first time I made them.
I use sliced precooked salmon from Sams. I add minced onion, lemon juice, mayonnaise, chopped fresh dill, an egg, half and half, and coat them in a little Obay seasoning mixed in the panko crumbs.
Either way, they are wonderful with my Homemade Tartar Sauce.

TIPS AND TIDBITS FOR THE BEST SMOKED SALMON CAKES
Optimal flavor. Buy good quality smoked salmon. Sams and Costco have some really great brands
Seasonings. Obay seasoning or creole seasoning adds so many flavor enhancers.
Fresh herbs. Fresh herbs like dill, parsley, or cilantro elevate the depth of flavor.
Onion and garlic. If you use onion and garlic, they need to be minced as these patties do not cook very long, and the flavor will be overpowering.
Bread crumbs and panko crumbs. I like to mix the bread crumbs in the salmon cake mixture to bind with the egg and dredge with the panko crumbs for a crispier outside.
Salt. Consider how much salt is used. Salt is naturally in the salmon so as not to overseason it.

HOW TO MAKE SMOKED SALMON CAKES
Add the bread crumbs and flaked smoked salmon to a bowl; set aside.
Place the onion, fresh dill, lemon juice, mayonnaise, egg, half and half, salt, and pepper in the bowl of a food processor. Pluse for 20 seconds until well combined for 20 seconds.
Add the mixture to the bowl with the bread crumbs and fold the mixture together, making sure everything is thoroughly mixed.
Divide the mixture into six equal portions and form each portion into a cake pattie; set each cake aside on a plate.
Combine the panko crumbs and Obay seasoning in a bowl.
Dredge each salmon cake in the panko crumbs and then dredge each salmon cake again, starting with the first one and ending with the last.
Heat 1/2 cup of oil in a 9 inch cast iron skillet over medium heat. Fry half the cakes in the hot oil until golden brown. 2 to 3 minutes on each side. Drain on a paper towel and fry the remaining cakes in the rest of the oil.
While the cakes are frying, prepare the Homemade tartar Sauce
