TIPS AND TIDBITS TO MAKE THE BEST BLACKBERRY PIE BARS
Use fresh ingredients. Fresh blackberries are preferred in this recipe. Make sure you use fresh blackberries before they get overripe.
Ensure the butter is cold. Cut the butter right out of the refrigerator before adding it to the flour mixture. This will ensure an evenly buttery texture in the crust. When pressing into the baking pan, resist handling the dough as much as possible. Spread the crumb mixture with the back of a spatula before pressing into the pan.
Size of baking pan. The recipe calls for an 11 x 14-inch baking pan, although a 9 x 13-inch baking pan may also be used. You may have to adjust the baking time.
Caution not to bake too long. The tops of the pie bars should be light golden brown. Resist from baking them any longer. The bottom crust will be too brown.

HOW TO MAKE BLACKBERRY PIE BARS
CRUST
Preheat the oven to 350 degrees F. Generously grease an 11 x 14-inch baking pan (or a 9 x 13-inch baking pan) with butter; set aside.
In a large bowl, whisk the sugar, flour, and sugar.
Add the butter and, using a pastry blender, cut the butter into the dry mixture until the pieces of butter is pea size.
Measure out 1 1/2 cups of the crumble mixture, setting aside for the crumble topping.
Press the remaining crumble mixture evenly into the bottom of the prepared baking pan.
Bake the crust until golden brown, about 15 to 20 minutes. Set on a wire rack while making the filling.
FILLING
In a large bowl, whisk the eggs until thoroughly combined.
Add the flour, salt, sugar, and sour cream and whisk until thoroughly combined and smooth.
Gently fold the blackberries in the creamy mixture.
Immediately pour the mixture evenly into the baked crust. Using a spatula, move the blackberries, making sure they are in a single layer.
Sprinkle the reserved crumble mixture evenly over the filling.
Bake until lightly golden brown, approximately 50 to 60 minutes.
Remove from the oven, set on a wire rack, and cool for at least 1 hour before cutting into bars.
Leftovers should be placed in an airtight container and refrigerated for up to 3 days.
