I have been wanting to make these roasted peaches for some time and never wanted to heat the oven long enough for them to cook.   The days here in Texas are beginning to cool down, and the peaches are getting fewer in number at the grocery stores, but the stores have started stocking fresh sage.  Now that is the end of one season and the beginning of another, summer and fall.

Roasted Ratatouille Vegetables,  roasted summer vegetables, eggplant, bell pepper, zucchini, and onion with a whole garlic into a delightful side dish. The recipe is healthy and comforting at the same time--pure deliciousness! I grew up with traditional cooking methods, and they are hard to change, but the older I get, the more I make changes to easier methods. As is with this Ratatouille recipe.   While traditional Ratatouille is made by sauteeing vegetables separately before combining them, I decided to roast the vegetables.

Grandmother's Old Fashioned Meatloaf {Cooked In A Cast Iron Skillet}

Old Fashioned Meatloaf Recipe   My Mother-in-law's recipe.  She taught me early on to cook my meatloaf in a cast iron skillet, which has never changed, and she also taught me not to forget to save the tripping for delicious tomato gravy. She would form her meatloaf in a bun and cook it with enough water about a third way up in the skillet. All those delicious juices make a wonderful gravy.   She believed that a good meatloaf recipe is one that has a good ratio of fat in the hamburger.
