Sometimes, I make these with a recipe of homemade peanut butter cookie dough. To save time during the rush of the holidays, I prefer using refrigerated Pillsbury Peanut Butter Cookie dough.
I slice it into 24 cookies. Roll each slice into 1-inch balls, press a mini Reese's Peanut Butter Cup in the center of each and bake.

Reese's Peanut Butter Cup Cookies
A warm, chewy peanut butter cookie filled with a miniature Reese's peanut butter cup. Looks fancy, but they are far from being complicated cookies.

- 1 roll (16.5oz) Pillsbury refrigerated peanut butter cookies (homemade Peanut Butter Cookie Dough)
24 mini Reese's Peanut Butter Cup candy, unwrapped
instructions
Preheat oven to 375 degrees F. Coat mini muffin pan with cooking spray, set aside. Cut dough into 24 portions and roll into 1-inch balls. Place a dough ball in each cup of the muffin pan.
Press one mini peanut butter cup candy in the center of each dough ball.
Bake for 10-12 minutes.
Allow cooling for 15 minutes before removing from pan.
Cool on wire rack for 30 minutes before storing in airtight container.
